We didn’t start with a business plan — we started with a table, a fire, and a family that believed in feeding people the right way. Long before we served our first paying customer, brisket was already at the centre of our gatherings. Birthdays, Sundays, graduations, lazy afternoons… there was always smoke in the air, seasoning on our hands, and someone watching the fire like it was a newborn.
Our smokes began in the back garden, with a hand-me-down steel smoker that had seen better years, but never tasted better beef. The recipe wasn’t written — it was whispered, argued over, tested, and perfected by generations. Slow smoke, honest salt, cracked black pepper, and patience: that’s our Holy Trinity.
When friends began showing up “for a quick hello” and staying six hours with plates in their laps, we realised we weren’t just cooking — we were creating a place people didn’t want to leave.
So we built that place.
Today, our smokehouse stands on the same principles our family always held close:
